Auntie J’s Chocolate Zucchini Cake

As the first & second born of 11 kids my Mom & Auntie J had to be just as creative as Grandma when it came to whipping up a quick meal or fast treat. One of their most fabulous creations was melt-in-your-mouth chocolate cake – the secret: Auntie J’s addition of zucchini! You can’t taste the zucchini at all but it makes the cake super moist & fudgey – scrumpdilicious!

2 cups flour, 2 cups white sugar, 3/4 cup unsweetened cocoa powder, 2 teaspoons baking soda, 1 teaspoon baking powder, 1/2 teaspoon salt, 1 teaspoon ground cinnamon, 4 eggs, 1 & 1/2 cups vegetable oil, 3 cups grated or pureed zucchini, 3/4 cup chopped nuts (optional)

Mix everything together in a large bowl the pour into a greased (9×13 inch) baking pan. Bake for 50 to 60 minutes at 350 fahrenheit/180 celsius/gasmark 4, until a toothpick inserted into the center comes out clean.

While your cake is baking whip up this simple frosting: 2 tablespoons cream cheese & 2 – 3 tablespoons of powdered sugar, mix well and spread onto cooled cake.
