Licketysplit Gingerbread…

Christmastime can be evil when you’re a kid & desperate for something you can’t have. For me it was always gingerbread. Gingerbread cookies, gingerbread houses, gingerbread men…I needed them but my mom refused to make the dough required to build these sweetly spicy treats. I swore that when I grew up I would have homemade gingerbread every Christmas! …know why my mom never made gingerbread? Because it’s a complicated & time consuming pain in the arsch! Luckily my find-the-easy-way-out brain discovered a quick & tortureless ingredient combination that creates delicious cookies…

and even groovy houses…

here’s how:

Grab: 1 packet (37g) of vanilla (or butterscotch) pudding, 1/2 cup butter, 1/2 cup brown sugar, 1 egg, 1 & 1/2 cups flour, 1/2 tsp baking powder, 1 & 1/2 tsp ground ginger, 1 tsp cinnamon

Mix it all together

For a speedy cookie simply pull off some dough, form it into balls, place on a cookie sheet, top with an almond (or whatever you have on hand) & bake at 180C/325F/Gasmark 4 for 10 – 12 minutes. *To create gingerbread men just roll out the dough on a floured surface & cookie-cutter-out your men!

While your cookies are baking create this simple drizzle topping: Mix together 1/2 cup powdered sugar, 2 tsp milk & 1 tsp maple syrup (or honey)

Once your cookies have cooled a bit drizzle ’em with the topping

Soooooo freakin’ easy! Sooooo freakin’ scrumptious!

* To create a stable (yet still edible) gingerbread house just add another packet of pudding to the dough, roll it out, cut 2 triangles (for the front & back) and 2 rectangles (for the sides), bake as above and let cool & harden over night. Plaster your house together with gingerbread icing: 1 egg white & 1 – 2 cups of powdered sugar beaten together until stiff. Decorate with candy and enjoy!
